    Banana Pudding Cake Recipe

    Besides making my berry cherry pie recipe during the summer one of my favorite summer desserts is banana pudding. It has been a treat made by my grandma for us for as long as I can remember eating table food. I have since learned her recipe, as well as transformed the pudding to cupcakes and cake form. I love banana pudding cake! All most as much as Nana's original banana pudding. Nothing tastes better than what grandma makes though, am I right?

    For this cake you can either make a yellow cake from scratch or you can use the boxed cake mix. The from scratch recipe gives it the extra touch of making it taste more like grandmas but sometimes you need quick and easy and that's just dump in a boxed cake mix. This is a recipe that includes how to bake a yellow cake mix from scratch but you can just use the cake mix, water, eggs, and oil that the boxed version calls for instead.

    Banana Pudding Cake ingredients

    for yellow cake:
    4 cups cake flour
    1 & ½ teaspoons baking soda
    2 teaspoons baking powder
    1 teaspoon salt
    2 sticks of butter (I prefer Land O'Lakes)
    2 cups of granulated sugar (I prefer Dixie Crystals)
    1 teaspoon Adams Extract vanilla flavoring
    2 cups of buttermilk
    3 large eggs
    2 medium bananas, mashed

    1 box of banana cream flavor pudding mix
    3 cups of milk
    2 medium bananas, sliced
    8 oz container of cool whip
    20 mini vanilla wafer cookies

    Preheat the oven to 350 degrees F. Spray a 9x13 baking dish with a non stick spray or baking spray (I like using Bakers Joy on my cake pans). In a large bowl, mix together the dry ingredients for the yellow cake- flour, baking soda, baking powder, sugar, and salt. Once those are well blended, make a well in the center of the bowl and add the eggs, butter, vanilla, milk and bananas and mix again.

    Bake your cake mix for about 25-30 minutes or until a toothpick or knife inserted in the center comes out clean with no runny batter stuck to it. Let the cake cool for about 5-10 minutes. Leave it in the pan! While the cake is cooling, mix the pudding mix and 3 cups of milk from the topping ingredients. I use instant and it's ready to pour over the cake in about 2 minutes. Take a small wooden spoon or skewer and poke holes all across your cake. Pour the instant pudding over the entire cake top. There will still be pudding on the cake top once you have added it all. Let the cake now chill in the fridge for about an hour. Once you have the cake cold you can add a layer of sliced bananas and then cover that with the cool whip. Top the cool whip with the vanilla wafer cookies (you can use the mini cookies whole or do as I did in the photos and crush them to crumbs and sprinkle across the cake in addition to whole cookies). Keep the cake chilled in the fridge.

      sweet cherry pie is my favorite dessert in the summer. I usually try and freeze some cherries just so I can taste some in the winter.
