    Easy (no machine) cherry cheesecake ice cream #SundaySupper

    I know there are "easy" ice cream recipes that are made with frozen bananas but this is not one of those. It is a pretty easy recipe to make though, I promise. This cherry cheesecake ice cream recipe combines some of my favorite treats. I enjoy cherries, cheesecake, Oreos, Cool Whip and ice cream so this homemade ice cream is simply wonderful combination for me. Yes this cherry ice cream is fairly simple to make you will need to be good at waiting before you can dig in to it.

    You don't need an ice cream machine for this recipe but you will need a mixer. You can also sub the Oreos with graham cracker crumbs but unless it's s'mores I don't really like graham crackers... but I do like Oreos (double or mega stuffed are the absolute best). You can also switch out the cherry pie filling for any other fruit filling- peach, apple, strawberry, mixed berry, they all can work with the right combo of flavors. Your kitchen cabinets could contain the next big thing for flavor combinations.

    Easy Cherry Cheesecake Ice Cream

    ingredients:
    1 (8 oz.) block of cream cheese, softened
    1 (8 oz.) container Cool Whip whipped topping
    1 (14.5 oz.) can of sweetened condensed milk
    ¼ cup of butter, softened
    1 (21 oz.) can of cherry pie filling- I use Duncan Hines Comstock
    1 tsp. vanilla extract
    15 Oreo (golden) cookies, crushed
    ¼ cup of butter, melted

    directions:
    Using a stand or hand electric mixer, in a large bowl blend the softened butter, vanilla extract and the cream cheese together. Blend in the sweetened condensed milk. Then on a low speed mix in the cool whip. Set this bowl aside for a few minutes. Take the 15 golden Oreos and crush them. You can do so with a food processor or put them in a large gallon size zip bag and crush them with a meat mallet or rolling pin. Mix the Oreo crumbs with the ¼ cup of melted butter. Add the pie filling to a large bowl with the Oreo crumb mix. Gently give this a few stirs. You don't want it all mixed together, you want it to swirl when mixed in to the cream part of the ice cream. DO not over mix the ice cream, you want to be able to taste each flavor mixed in. Pour ice cream into a large loaf pan or bowl that can go in the freezer. Cover with saran wrap or tight fitting lid and freeze the ice cream for 5-6 hours or if you can handle the waiting freeze it overnight. If the ice cream is to frozen to scoop allow it to sit on the counter at room temp for just a couple minutes and you should then easily be able to scoop right in to the ice cream.
