Similar to my blueberry doughnuts recipe I also enjoy baked strawberry donuts. Strawberries are one of my favorite fruits. Strawberries have helped me push through the cruddy weather we've had this first week of spring. We have had snow twice since the calendar said it was "spring". Gotta love Virginia weather. How's the first week of spring been looking around your place? I'm so over the cold winter weather and ready for some sunny, much warmer days. Like days warm enough to go strawberry picking again.

What do you need to make these yummy baked strawberry donuts? All purpose flour, baking powder, salt, brown sugar, butter, chopped fresh strawberries, milk, and eggs. I used some of the fresh eggs that Jersey Boy brought home from a friend the other day. Those were some very orange yolks to those eggs. You can also use more milk along with some confectioners sugar, and vanilla extract to make a smooth donut glaze to top your baked strawberry donuts.

When you are preparing your donut pan for it to be (hopefully) non stick I have had better luck with using a baking spray like Bakers Joy than I have using just a non stick cooking spray like Pam. I mix the dry ingredients together and then add the liquid/wet ingredients to them. Once I have my batter ready I have found it easier to fill the donut pan with the batter from a piping bag with the corner snipped off than to try and fill it with a spoon.
